I’m a creature of habit, especially when it comes to my meal prep for a week of work. I bring my breakfast to work every morning and I rotate between three simple options:
- Yogurt with nuts
- Hard boiled eggs and fruit
- PB&J overnight oats
I love all of these options because I can prep multiple servings at once. Overnight oats is my favorite because it feels so indulgent, even though there is no sugar! Every bite is sweetened by dried fruit. Plus, who doesn’t love starting their day with peanut butter?!
For my overnight oats, I recommend making up to three servings at a time. Follow the below recipe for a grab and go breakfast!
- ½ cup old fashioned oats
- 1 Tablespoon of chopped pecans or walnuts
- 1-2 Tablespoons of craisins (the “jelly”)
- Sprinkle of Cinnamon
- 1 Tablespoon of creamy peanut butter or add to taste
Add all of the ingredients together and stir! I like my oatmeal thick, so I use just enough milk to reach the top of the oats. If you like yours creamier, add more milk to taste! Then let it sit in your fridge overnight or up to 3 days (personal recommendation)
